Sucrose palmitate is a white to off-white powder or crystalline powder, odorless or with a slight fatty odor. It is a non-ionic sugar-based surfactant synthesized by esterification of sucrose and palmitic acid, mainly consisting of monoester with a small amount of diester and polyester. It has an HLB value of approximately 11–16, exhibits both hydrophilic and lipophilic properties, and is mild, low-irritating, and biodegradable.
